Directions

Prepare Ingredients:

Cook 1 cup of white rice and set aside. Wash and prep all vegetables — slice the grilled chicken breast, shred the purple cabbage, and cut the bell peppers.

Grill the Bell Peppers:

Lightly brush the mixed bell peppers with oil and grill them for 2–3 minutes until tender and slightly charred.

Assemble the Bowl:

In a serving bowl, start with a base of cooked rice. Layer on fresh spinach leaves, shredded cabbage, grilled bell peppers, and cubed chicken breast.
